This knife blade is made from AUS.8 (8A) Steel, so it's really hard to rust, being developed to the professional use.
And, also, the component Molybdenum Vanadium Steel (0.10% to 0.25%), increasing the resistance.
Differently from most of the others knives, that are sharpened by machines, the knives of this serie are all manual sharpened, checked and the final blade finish is handmade.
These knife blades are sharpened with wire from one side for right-handed in the ratio of 70/30%, increasing the cut precision. For left-handed, the price has an increase of 20%.

・After use, do not leave the knife dirty. Hand wash it with a neutral detergent and then remove any moisture.
・Carbon steel knives are extremely prone to rusting, so clean and dry them promptly. When storing, apply camellia oil to the blade.
・Avoid using simple sharpeners as they can damage the blade. If you must use them, please follow up with maintenance using a whetstone.
