This knife blade is made from AUS.8 (8A) Steel, so it's really hard to rust, being developed to the professional use.
And, also, the component Molybdenum Vanadium Steel (0.10% to 0.25%), increasing the resistance.
Differently from most of the others knives, that are sharpened by machines, the knives of this serie are all manual sharpened, checked and the final blade finish is handmade.
These knife blades are sharpened with wire from one side for right-handed in the ratio of 70/30%, increasing the cut precision. For left-handed, the price has an increase of 20%.
In April 2017, during the World's 50 Best Restaurant awards event in Australia, this knife was chosen to be offered as gift all the 50 chefs winners.
